COOK-OFF INCLUDING THE DESIGNATION OF HOW-TO TEXAS AS A REGULAR EVENT LOCATION FOR THE ASSOCIATION FROM FUNDS BUDGETED FOR SUCH PURPOSES.

UH, MY NAME IS MIKE GOMEZ.

I AM REGION ONE DIRECTOR FOR THE INTERNATIONAL BARBECUE CRUISE ASSOCIATION.

UH, MY WIFE AND JENNY AND I, UH, JENNY AND I, WE, UH, WE KIND OF FELL INTO A REGION WHERE IT WAS ACTUALLY OUR TURN TO HOST THE TEXAS SHOWDOWN AND THIS SHOWDOWN TRADITIONALLY HAS MOVED FROM REGION TO REGION.

UM, AND SO WE WERE LOOKING FOR A SPOT TO BE CENTRALIZED SOMEWHERE WHERE PEOPLE CAN GET TO EASY.

UM, WE HAD ACCESS TO, UH, NOT JUST VENDORS, BUT YOU KNOW, LOCAL SUPPORT.

AND SO WE SEARCHED AROUND FOR A LITTLE WHILE AND WE ACTUALLY HAD A PHONE CALL.

ACTUALLY.

I MET A GENTLEMAN AT A COOK-OFF WHO WAS ACTUALLY A MERCHANT FROM YOUR TOWN WHO SAID HUDDLE WOULD BE THE PERFECT PLACE.

UH, THERE WAS A PLACE RIGHT NEXT TO MY HOUSE.

I SAID, MAN, YOU'VE JUST WANTED IT THERE.

CAUSE IT'S NEXT TO YOUR HOUSE.

YOU DON'T WANT TO TRAVEL THIS YEAR.

SO, UH, ANYWAY, WE, WE, UH, WE MET WITH HIM AND WE DISCUSSED SOME ITEMS AND THEN, UH, HE REACHED OUT AND WE HAD SOME MEETINGS AND, AND SAID, YOU KNOW WHAT? THIS IS, THIS IS A PRETTY GOOD IDEA THAT THIS, THIS COOK-OFF WAS SCHEDULED TO BE.

AND THE MAIN REASON I'M DOING THAT IS WE LIVE CLOSE TO, WE WERE IN CEDAR PARK.

WE HAVE PREP.

WE HAVE SOME PROPERTY HERE IN HUDDLE AND WE SAID, OKAY, WE'RE HERE.

WE DON'T WANT TO BE DRIVING IN WAXAHACHIE IF YOU WANT US TO HELP COORDINATE THIS.

AND ONE OF THE THINGS THAT, UM, THAT HAPPENED AFTER THIS LAST ELECTION WAS AFTER THE MEETING, IT WAS A CONSENSUS.

THIS IS THE DIRECTION WE NEED TO GO.

THIS SHOWDOWN BRINGS IN A HUNDRED, 150 COOKS.

AND AT ONE POINT IT WAS BRINGING IN OVER 200 COOKS, PRE PANDEMIC.

OKAY? SO WE'RE SLOWLY CATCHING UP AND TRY AND RECOVER FROM ALL THAT.

BUT IT CAME ABOUT BECAUSE THIS HAS GIVEN BACK TO OUR COOKS AND EVERYBODY SAYS, WELL, WHAT ARE YOUR MEMBERS DOING FOR EVERYBODY ELSE? WHY ARE WE GIVING BACK TO THESE, TO THESE COOKS? WELL, THESE COOKS DO THREE TO FOUR COOK-OFFS A MONTH, SOMEWHERE IN THE STATE OF TEXAS.

IBCA FORMED IN 1989.

AND WE'RE THE LARGEST SANCTIONING BODY OF BARBECUE IN THE STATE OF TEXAS.

WE HAVE A LITTLE OVER 1300 MEMBERS CURRENTLY ANGRY GROW EVERY MONTH.

THE REASON WE DID THIS IS BECAUSE WE WANTED BARBECUE TO STAY TRUE TO TEXAS BARBECUE.

WE WANTED THE JUDGING TO REMAIN TRUE TO THE PAST.

THERE'S NO DECORATIONS.

THERE'S NO, THIS THERE'S NO THAT YOU COOK HALF A CHICKEN.

HARDEST THING TO DO IN THE WORLD IS TO COOK THE BREASTS AND THE THIGHS AT THE SAME TIME AND BOTH BE JUICY.

SO IT'S, IT'S A VERY CHALLENGING, A LOT OF THESE COOKS.

I WILL TELL YOU, 90% OF THE COOKS THAT ARE COMING TO THIS, COOK-OFF TAKE IT VERY SERIOUSLY.

AND I STARTED THINKING, I SAID, YOU KNOW, THESE GUYS, EVERY COOK-OFF THEY GO TO IS FOR A NONPROFIT YEAR-ROUND

12 TO 15 COOKS SOMETIME EVEN 20 COOKS A YEAR.

THEY GO TO, SO ALL THEY'RE DOING IS GIVING BACK.

YOU KNOW, SO WE TOOK AND PRE PANDEMIC.

THE REST OF THE PAYOUT COMES BY HOW MANY PEOPLE SIGN UP? HOW MANY TEAMS SIGN UP, UH, AS OF THIS MORNING, WE'RE AT 130 TEAMS. AND I PREDICT WE WILL HIT 150 BY SATURDAY, BY FRIDAY AFTERNOON WHEN THE REGISTRATION CLOSES A LOT OF COOKS, WAIT TILL THE END OF THE, THE TIME PERIOD OF JUST SHOW UP AND SAY, HEY, I'M HERE.

IT'S KIND OF A STRATEGY.

SO OTHER PEOPLE DON'T KNOW THEY'RE COMING.

THEY'RE ALREADY ASKING US, HEY, WHEN ARE YOU GOING TO POST WHO'S COMING? UM, THAT BEING SAID, WE HAVE AN INTERNATIONAL TEAM TEAM COME FROM MEXICO.

WE HAVE A TEAM COMING FROM NEW MEXICO.

AND HOW ARE WE GOING TO GET JUDGES THERE, TENTS, TABLES, AND ALL THAT OTHER KIND OF STUFF AND MAKE IT PALPABLE, JOHN, JUST FOR THE COOKS.

SO THEY WANT TO COME BACK, BUT FOR THE CITY OF HUDDLE, TO WANT US BACK FOR YOUR CITIZENS TO COME UP AND TELL YOU, HEY, THIS WAS A GREAT COOK.

WE WANT OUR OWN HIPPO.

AND THEY JUST LIKE, AND I WAS LIKE, YEAH, COME ON, GET MORE MOTIVATED LIKE HUDDLE, YOU KNOW? AND SO THEY'RE EXCITED AND THEY'RE LOOKING TO, THEY'RE EXCITED TO GET HERE AND GO TO WORK.

SO I'LL GO AHEAD AND LET JEN EXPLAIN JUST SOME OF THE COST STUFF AND SOME OF THE OTHER THINGS THAT SHE'S PLANNING FOR THIS EVENT.

THE BIGGEST CHALLENGE OF THIS EVENT HAS BEEN THAT THERE IS NO INFRASTRUCTURE.

I DON'T COME AT IT, LOOKING AT IT.

IT'S AN INSULAR EVENT WHERE WE'RE TRYING TO REWARD THE COOKS AND JUST TAKE CARE OF OUR COOKS AND PAY ATTENTION TO IBC.

WE CAN'T SUCCEED THAT WAY AT ALL.

AND SO I UNDERSTAND THAT NOTHING IS A SUCCESS AT ALL.

IF YOU DON'T MAKE IT A COMMUNITY DRIVEN EVENT, AND IF YOU DON'T PAY HOMAGE AND REWARD AND APPRECIATE THE NEIGHBORHOODS THAT YOU'RE IMPACTING AND COMING AROUND.

SO THE EVENT NOW THERE'S TWO PIECES, BASICALLY OPERATIONS AND DEVELOPMENT.

AND THE DEVELOPMENT PIECE IS WHERE I AM COMING IN TO TURN THIS EVENT INTO AND TO MAKE IT A VERY SUCCESSFUL EVENT THAT, UH, IT IS SOMETHING THAT HEDO IS DESERVES AND HOW TO CAN BRAG ABOUT, AND THAT WE FEEL AS THOUGH, UM, YOU GUYS WANT US TO COME BACK.

AND THEN WE'RE ALSO ADDING AS WE HAVE GONE ON THIS WEEK, AND I'VE BEEN WORKING CLOSELY WITH CITY STAFF, WE ACTUALLY ADDED AN ADDITIONAL FACILITY THAT WE RENTED SO THAT WE CAN HOST A MOVIE NIGHT ON FRIDAY NIGHT.

SO SOME OF THAT PADDING IN THAT 3,500 IS EXPENSES THAT I CERTAINLY THINK WE WILL MEET THAT I CAN'T GUARANTEE WE WILL, BUT I FEEL IT'D BE ABLE TO FEEL BETTER IF WE WERE PREPARED THERE.

SO THE 21 IS THE ACTUAL COST THAT YOU'RE LOOKING AT.

OUR BIGGEST COSTS OBVIOUSLY HAVE BEEN IN BUILDING A TOWN WHERE THERE IS NO TOWN.

WE HAD TO RUN A 40 BY 60 TENT.

WE HAD TO BRING IN ELECTRICITY.

THERE'S NO WATER, AND WE HAVE FIRE.

SO WE HAD TO BRING IN WATER.

THOSE THINGS ARE NOT CHEAP.

ALL THE PORTA-POTTIES THE HAND WASHING STATIONS WE HAVE TO HAVE MORE THAN YOU WOULD EVEN IMAGINE TO KEEP THIS SAFE AND HEALTHY.

AND ESPECIALLY IN LIGHT OF WE'RE COMING OUT OF THE PANDEMIC.

AND ESPECIALLY IN LIGHT OF THE FACT THAT WE'RE TALKING ABOUT FOOD HERE, WE HAVE TO HAVE, ACCORDING TO IBCA RULES, WE HAVE TO HAVE UNDER OUR JUDGES TENT, 55 JUDGES AT A TIME IN THEY'RE ALL TASTING FOOD, AND IT'S DONE VERY ORGANIZED.

THE OPERATION SIDE OF THE BUSINESS OF IPCA HAS THAT DOWN.

HAS THE VOLUNTEERS LINED UP, HAS THE SCORING SYSTEM.

AND IT'S A VERY GOOD EXPERIENCE.

SO THE JUDGES ARE THAT ARE COMING IN TO GET TO TASTE OR TASTING THE BEST OF THE BEST BARBECUE IN A VERY ORGANIZED FASHION.

THERE'S NOT GOING TO BE WOODEN PICNIC TABLES.

WE'RE GOING TO HAVE NICE ROUND TABLES WITH BLACK TABLE CLAWS.

WE HAVE OUR LOGO IN THE MIDDLE OF THE CENTERPIECES.

IT'S GOING TO BE COOL IN THERE.

SO I EXPECT PEOPLE WILL SETTLE IN ON FRIDAY EVENING, THE JUDGES OR THE COOKS WILL GO AND DO THEIR BUSINESS AT THE JUDGING TENT.

AND THE FAMILIES WOULD GO OUT AND EAT LOCAL RESTAURANTS, AND THEN COME BACK AND WATCH THE MOVIE.

UM, THEN FRIDAY NIGHT WINDS DOWN AND THEN WE MOVE INTO SATURDAY, SATURDAY MORNING FOR THE COMMUNITY FROM 11 TO FIVE, WE'RE GOING TO HAVE A FREE HOT DOGS AND HAMBURGERS AND CHIPS.

LIKE INSTEAD OF EVERY YEAR SPENDING 10,000 FOR POTABLE WATER, HOW DO WE JUST GET POT OF A WATER THERE PERMANENTLY? BUT, UM, I DO THINK THAT, UM, THERE IS A POTENTIAL, UM, IF THIS GOES DECENT THAT NEXT YEAR, IT CAN GROW TO THE POINT TO WHERE, UM, MAYBE IN TWO OR THREE YEARS YOU HAVE A REGIONAL TYPE EVENT THAT YOU HAVE THOUSANDS OF PEOPLE COMING AROUND AND IT'S, IT'S MORPHED INTO SOMETHING MORE TO WHERE WE'VE KIND OF INCUBATED IT.
