UH, AND WE WERE, WE WERE TRYING TO FIND A, A, A PLACE THAT HAD ENOUGH CONCRETE,
HERE, UM, WE FORMED BASICALLY BECAUSE WE HELP NONPROFITS THROUGHOUT THE ENTIRE STATE SANCTION THEIR KICKOFFS, UH, COOKERS WHO ARE CHASING POINTS TO TRY TO BE QUALIFIED TO TRY TO QUALIFY FOR A FINAL CHAMPIONSHIP AT THE END OF THE YEAR.
COOKOFF, UH, THEY GO FROM PLACE TO PLACE.
UH, AND SOME OF 'EM DON'T EVEN REALIZE THAT THEY'RE DOING THIS, BUT EVERY COOKOFF IS, IS BENEFITING IN A NONPROFIT.
SO THIS NONPROFIT THAT WAS CREATED WAS TO HELP GIVE BACK TO THE COOKS AND HELP THESE NONPROFITS SUCCESSFULLY PUT ON A SANCTIONED EVENT TO JUST MAKE IT MORE, MAKE THEM MORE ACCOUNTABLE AND MAKE IT MORE STANDARD THROUGHOUT THE ENTIRE STATE OF TEXAS.
UH, WE ARE THE LARGEST ORGANIZATION OUT THERE DOING THIS.
WE'VE BEEN, WE WE'RE THE OLDEST AND I'M ACTUALLY ONE OF THE REGION ONE DIRECTORS THAT ENCOMPASSES THIS AREA ALL THE WAY UP TO THE PANHANDLE.

UH, AND JUST TO GIVE YOU A KIND OF WHERE WE'RE GOING WITH THAT AT SOME POINT, WE'RE TRYING TO CALL THAT THE GOVERNOR'S CUP.

BUT ONE THING I NOTICED ABOUT COOK-OFFS IS THAT THEY WERE VERY INSULAR.
THEY GO AND THEY HAVE IT COOKOFF AND THE COOKS COME IN AND THEY COOK AND THEY TURN IN AND THEY WIN AND THEY DO THE AWARDS AND A CUT GETS CHECKED FOR THE NONPROFIT AND THEN EVERYBODY GOES HOME.
IT DOESN'T REALLY INVOLVE THE COMMUNITY USUALLY, OR, OR ENGAGE THE PUBLIC BECAUSE THEY'RE COOKING MEAT TO TURN IN, NOT TO SELL OR TO PROVIDE TO THE PUBLIC.
AND I JUST WOULDN'T HAVE THAT.
I MYSELF WORK FOR SPECIAL OLYMPICS AND I DON'T SEE A REASON WHY THE COMMUNITY SHOULDN'T BE TIED INTO THIS AND WHY WE SHOULDN'T BE PROVIDING A BETTER BENEFIT BACK TO THE PEOPLE THAT ARE SUPPORTING US AND HOUSING US.

UM, THERE'S A SIGNIFICANT NUMBER OF COSTS THAT GO INTO THAT AS FAR AS INFRASTRUCTURE LIGHTS HAD TO BUILD A TOWN, LIGHTS, PORTA-POTTIES, WATER, ALL OF THAT.
SO WE TURNED, UM, THAT PIECE OF ASPHALT INTO A LITTLE MINI VILLAGE, UM, INVOLVED THE PUBLIC AT EVERY SINGLE STEP OF THE WAY.
UM, FIRST AND FOREMOST, THE POSTCARDS THAT WENT OUT WERE THE ACTUAL NOTIFICATION OF THE PERMIT APPLICATION.
BUT IT WAS A POSTCARD THAT SAID, HEY, TO ALL OF OUR BOARDING NEIGHBORS, IT'S 388 PEOPLE, PLEASE COME BE, UM, A VOLUNTEER JUDGE.
WE'LL HAVE SNOW CONES, GAMES, ALL KINDS OF THINGS WHILE YOU'RE IN THE JUDGING TENT.
YOU CAN HAVE LEFTOVERS, YOU CAN BRING TRAYS OUT.
THAT CONNECTED ME TO THE HUDA RESOURCE CENTER 'CAUSE THEY GOT WIND OF IT.
AND SO THIS YEAR WE'RE ACTUALLY BENEFITING THE HUDA RESOURCE CENTER AND THEY'RE GONNA BE ORGANIZING A PICKUP OF ALL OF OUR LEFTOVER TRAYS.
WHEN I SAY LEFTOVER TRAYS, A A JUDGE, A COOK TURNS IN EIGHT RIBS AND YOU'RE ONLY NIBBLING ON LIKE ONE OF THOSE RIBS.
SO AFTER THE RIB JUDGING GOES ON, WE GET THESE HUGE TRAYS BACK WITH AT THIS COMPETITION, A THOUSAND RIBS.
SO WE'RE BOXING 'EM UP AND WE'RE PROVIDING THEM NOW TO THE PEOPLE WHO ARE SERVED BY THE HODA RESOURCE CENTER, AS WELL AS OTHER THINGS THAT WE'RE DOING AS FAR AS GIVING THEM, UH, FINANCIALLY.
FRIDAY NIGHT WE OPEN, UM, PART OF THE PARK UP TO THE PUBLIC AND WE DO A MOVIE ON THE CREEK, TECHNICALLY THE LAKE.
AND WE BRING IN A 50 FOOT MOVIE THEATER AND PLAY A, UM, MOVIE THIS YEAR.
IT'S THE JUMANJI AND THE JUMANJI SECOND ONE.
UM, AND WE HAD A REALLY GOOD INTERACTION BETWEEN PUBLIC FOLKS COMING OUT AND THE HEAD OF CITIZENS KIND OF ARRIVING PARKING IN THEIR SPOTS AND ENGAGING WITH OUR COOKS AND THEIR FAMILIES AND TALKING ABOUT THE RIGS AND ALL THE THINGS THEY DO TO TRAVEL ACROSS THE STATE.
THIS COMPETITION DOES BRING IN THE VAST MAJORITY OF PEOPLE ARE FROM, UM, TEXAS AND BEYOND.
SO THE COOKS THEMSELVES, THERE'S PROBABLY A HANDFUL FROM HUTTO, BUT NOT THAT MANY.
